Bottom round is a beautiful block of lean meat with coarser muscle fibers. It could be perfectly skewed, therefore, serving with any sauce including “svíčková” – a vegetable sauce typical for Czech cuisine – is recommended; it is also suitable for making lean goulash or for roasting.
